1. Your products use ‘wine flour’ which contains Resveratrol. So what you’re telling me is, wine can be healthy??
Wine can certainly be healthy. There are multiple studies connecting wine (especially red wine) with a range of health benefits provided by Resveratrol and antioxidants. The Wine Flour that we use in our products is made from the pomace left over after the crush – what’s left after the juice is extracted – so it contains lots of healthful goodies. The Res-V, antioxidants plus Iron, Fiber & Potassium, to name a few.
Our brownies are still brownies – made with good stuff like eggs, sugar and butter – so they aren’t exactly health food. There must be some aromatherapy or psychic benefit as well, because my mood always improves after eating one! The pasta consists of only Durum wheat and the wine flour so it’s quite good for you. One three ounce serving provides 57% of your daily iron, 27% fiber and 21% protein. Plus it tastes great and can go with basically any sauce!
2. What were you doing before you started Marché Noir?
We started Marché Noir Foods last year after having been in business for 4 years as a local wholesale & retail bakery called Blackmarket Bakery. We did (and still do) farmers markets, custom cakes and wholesale baking for foodservice. Marché Noir Foods is our dedicated wholesale line reflecting our oblique perspective on the epicurean lifestyle.
Before Blackmarket Bakery, I attended the CIA in Napa Valley, studying Baking & Pastry, and worked in several bakeries. Prior to my obsession with baking, my husband and I owned a wholesale ceramics business and, during this whole time, we have been raising our four children – ages 17, 15, 13 and 10 – two boys & two girls.
3. What are three adjective that describe your products?
Healthfully indulgent, luxuriously humble, unexpectedly delicious
4. What does food mean to you?
Everything! It’s what I think about constantly – write – teach – research and make all day. Food and preparing food shouldn’t be scary to people, whether they are afraid of “messing up” a recipe or eating too much. We all need it and we should all love it!
5. Anything you would like to ask the Foodzie community?
Boy, anything & everything! We’re just starting to branch out into the internet food world so all of this is relatively new to me. How about this… how do you as consumers rationalize/balance out your desire for sweets & indulgence with the knowledge that we should strive to eat relatively healthily? Everyone needs both, right?
