Vanilla French Toast

 

Served at a beautifully set table or on a tray in bed, this breakfast is the perfect way to tell Mom she’s the best. If you’ve got a crowd, maple bacon or chicken apple sausage would round out this meal nicely. Step 1: For the fruit salad, cut desired fruit into bite sized pieces. Mince lemon balm and mint leaves; add to fruit mixture and toss to coat. Set aside.

Step 2:
To prepare French Toast, whisk eggs, half & half, vanilla, and almond extract in a large bowl to combine.

Step 3: Cut bread into thick slices. Turn pieces in egg mixture to coat. Let sit for 10 minutes.

Step 4. Over medium high heat, melt butter (or oil) in large skillet. Add slices and cook until each side is golden brown.

Step 5. Serve with melted butter, syrup, powdered sugar, or your favorite jam. Plate with fruit salad and present to Mom!

Fruit Salad

2 Bananas
1 Apple
1 Pear
4 Clementines
2 Blood Oranges
Pint of Strawberries
Fresh Lemon Balm
Fresh Mint Leaves

French Toast

1 loaf bread (I used whole wheat, but feel free to choose your favorite. Challah works great too!)
6 eggs
1 cup Half & Half
2 tablespoons Vanilla Extract
1 tablespoon Almond Extract

Optional: Maple Syrup, Powdered Sugar, Jam, Butter, Sliced Almonds
