Life for the gluten intolerant and celiac isn’t easy. It’s hard enough living in constant fear of eating restaurant food contaminated with gluten due to bad practices. But even in the home, trying to find suitable approximations to your favorite flour-based foods can be anything from complicated to frustrating to outright impossible.

Until now.

Lena Kwak, a research and development chef at The French Laundry has finally achieved the holy grail: Cup4Cup, A gluten-free flour that can be used interchangeably and in equivalent proportions with regular all-purpose flour. At last, gluten-intolerant diners can feast at the bounty denied them for so long.

How effective is this flour? Blogger Carol Blymire of Alinea at Home (and, previously, French Laundry at Home) blogs about celiac on her ancillary blog Gluten for Punishment. On her birthday last month, she had the opportunity to work with this new flour, testing it out on recipes long denied her. She and some friends gorged on biscuits and sausage gravy, fried chicken with polenta waffles, peach pie, and most importantly her favorite birthday cake, a chocolate cake with peanut butter frosting. It was a cake she had not enjoyed in an extremely long time. We can’t imagine a better birthday gift.
