Rustic northern Italian salami made from the pork leg. A bit coarser with larger flecks of fat and a bit more pronounced salt flavor. Minimal seasonings of garlic, whole pepper, and red wine. Each salami is about 12 ounces. To store dry salami: Wrap in butcher paper and refrigerate. For a more firm salami, store on shelf. Shelf life is 4 months to a year.
