The Story

Mix a hip gastropub and updated Southern comfort foods and you get The Redhead, a popular neighborhood restaurant run by Meg, Gregg and Rob in the East Village of NYC. While the restaurant is a hit among locals, it's the standout bar snack, Bacon Peanut Brittles, that's earning food cred beyond the bar stools. Meg has even drummed up a mini side business by packing and shipping this better tasting cousin of the Beer Nut to bacon and snack lovers across the country.

How It's Made

More savory than sweet, these crunchy peanuts are tossed lightly with maple syrup, a dash of cayenne, thyme and small chunks of salty, smoky bacon. There's even a rumor Meg actually fries the bacon in the hot liquid sugar before coating the peanuts. The mixture is then roasted until the maple becomes a tacky, sweet glue that holds the bacon and peanuts together in satisfying bitefuls. The Bacon Peanut Brittle's uncomplicated recipe is a testament to Meg's philosophy of high quality ingredients equaling an abundance of taste.

Did You Know?

Bacon Peanut Brittles are a more delicious version of the classic bar favorite, Beer Nuts. Although the name alludes to a hoppy ale making its way into the roasting process, Beer Nuts do not actually contain any beer. The name was created to help market the otherwise not so interesting nuts as the perfect snack for your brewski. Maybe they were onto something, as we've discovered these Bacon Peanut Brittles taste even better with a good Brooklyn Brewery Lager in hand!
