The Story

John and Lola Weyman founded Zürsun in 1985, when Lola discovered several farmers who were growing unknown lentil varieties in Idaho. For the duration of the decade, the couple distributed American-grown lentils throughout the United States, Canada, and Europe.

In 2004, Zürsun was acquired by Jim Soran, a second-generation, self-proclaimed “bean guy” with 60 years of family history in the Idaho bean industry. Jim continues to maintain the company’s commitment to discover, produce, and distribute “the world’s finest heirloom lentils.”

How It's Made

The many varietals of Zürsun Heirloom Beans are grown on small scale farms in the Snake River Canyon region of South Central Idaho, which is known as the Magic Valley Growing Area. The arid climate and rich, well-drained soil, moderate temperatures, and stable moisture levels are all ideal for bean growing. Zürsun’s beans are inspected throughout the growing season for plant health, pure strains, and consistency. Once the beans are harvested, the final product is delivered fresh and clean to customers. If you’re looking to supplement an organic, healthy, inexpensive diet, heirloom beans are a great addition to any meal.

What We Love

Authentic: Zürsun was the original US company to offer authentic heirloom beans.

Nutrient-Rich: Beans contain the highest percentage of protein found in any vegetable. They are also full of vitamins and minerals.

Versatile: Cranberry beans are a great addition to soups, salads, pasta dishes, and casseroles.

By the Numbers

60: Number of years owner Jim Soran’s family has been in the bean business.

300: Number of farmers who grow beans for Zürsun.

10,000: Known heirloom bean varietals, all of which were passed down through the generations.

Did You Know?

Cranberry beans are known for their creamy texture, which has a flavor similar to chestnuts. If you look closely, you’ll notice that the red specks on the beans disappear during the cooking process.
